Description
A simple, excellent Pesto recipe... good for Basil at the end of a season.
Ingredients
- 2 c basil leaves
- 4 clv garlic
- 1 c walnuts (or pine nuts)
- 1 c olive oil
- 1 c parmesan cheese (grated)
- 1⁄4 c romano cheese (grated)
Instructions
1. Combine the basil, garlic and walnuts in a processor and chop up.
2. With the motor running, add olive oil, then turn off
3. Add Parmesean and Romano cheese and process briefly Add to cooked pasta that is coated with olive oil
Notes
Mary used to use walnuts for a different (and cheaper) taste, but traditional pine nuts work well well.
