Shrimp with Tomatillos, Jalapenos, Cilantro

Description

Not for the faint of palate, these shrimp are very spicy, but in a way that keeps you eating more...

Ingredients

  • 1 lb shrimp
  • 2 jalapeno peppers
  • 5 clv garlic
  • 1 large red onion (or 2 small)
  • 6 limes
  • 2 bn cilantro
  • 2 t cumin
  • 1 t salt
  • 3 T olive oil
  • 7 tomatillos (good-sized. if small, use a couple more)

Instructions

1) quarter then slice the onion in 1/4 inch slices

2) Chop up garlic and cilantro finely

3) Juice all but 1 of the limes (if doubling, save 2 limes, etc.)

5) slice the jalapenos in rounds... 1/8 inch or so thick.

6) In food processor or blender blend together tomatillos, salt, cumin, lime juice, all the cilantro minus a handful for a garnish. Mixture should be just barely chunky--the consistency of salsa.

7) Heat oil in a dutch oven or some similar deep pot over high heat

8) Add garlic, then jalapenos, then onions. Fry until onion just barely translucent--perhaps a minute or so.

9) add lime-salt-cumin-tomatillo-cilantro mixture bring to a boil and boil for a minute or two to start reducing it.

10) add shrimp to mixture, and toss. bring to boil and then cook until shrimp are done (very quick)

11) remove shrimp into serving bowl with slotted spoon

12) reduce sauce until thick (about the consistency of split pea soup), toss shrimp into it to reheat and immediately pour into serving tray

13) garnish with lime wedges from remaining lime and remaining fresh cilantro.

14) Eat... with plenty of water!
