Ingredients
- 1 lb smoked ham
- 1 t garlic powder
- 1 t ground black pepper
- 1 T salt
- 1 T hot pepper sauce - to taste
- 1 bn collard greens
- 1 T butter
Instructions
In a large pot, bring 2 quarts of water to a boil and add smoked meat, seasoning, and hot sauce. Reduce heat to medium and cook for 1/2 hour.
Wash the collard greens thoroughly. Stack 6 to 8 leaves on top of one another, roll up, and slice into 1/2 to 1-ince thick slices. Place greens in pot with meat and add butter. Cook for 30-45, stirring occasionally. When done taste and adjust seasoning.
Notes
Bacon is a good smoked meat choice.
