Garlic Scapes and Goat cheese

I have never had garlic scapes in my kitchen before, so just wanted to share a yummy tip for using them. I chopped up 4 garlic scapes and sauteed them lightly in 2 tbs butter, then cracked 4 eggs over them and crumbled the arethusa goat cheese into the eggs. With salt and pepper the result was delicious!
